Pineapple Cherry Squares

  • 1 20 oz. can crushed pineapple
  • 1 med size bottle of cherries (cut into pieces) and cherry juice
  • 2/3 c. white sugar
  • 3 Tbsp. cornstarch
  • pinch of salt
  • 2 eggs
  • coconut

Directions

    Mix together pineapple, cherries, juice, sugar, cornstarch and salt, cook until thick.

    Add beaten yolks and cook 2 minutes longer.

    Pour over crust.

    Beat egg whites and add 1/4 sugar and spread over square.

    Sprinkle with coconut.

    Brown in a 400° oven.
