- 1 1/2 c. flour
- 2 c. persimmon pulp
- 1 1/2 c. buttermilk
- 1 tsp. soda
- 1 tsp. baking powder
- 1/8 tsp. salt
- 2 large eggs
- 1/8 lb. butter
- 1/4 c. cream
- 2 c. sugar
Directions

1Mix together pulp and sugar; add eggs and beat well.

2Add soda to buttermilk; stir until foaming stops and add to mixture and stir.

3Sift flour; add salt and baking powder.

4Sift into persimmon and buttermilk mixture and beat well.

5Add cream.

6Melt butter in 9 x 13-inch pan.

7Pour into batter, leaving enough to grease pan well.

8Beat mixture well.

9Pour into baking pan.

10Bake at 325° for 45 minutes or until done.
