- 2 sticks margarine
- 2 c. light brown sugar
- 4 eggs
- 2 c. milk
- 2 c. grated sweet potatoes
- 2 c. strained persimmons
- 1 grated coconut or 1 c. coconut
- 2 1/2 c. flour
- 1/2 tsp. salt
- 4 tsp. baking powder
- 1/4 tsp. soda
- 1 tsp. cinnamon
- 1 tsp. cloves
- 1/2 lb. raisins
Directions

1Mix margarine and sugar.

2Add eggs, beating until well mixed. Sift together dry ingredients and add alternately with milk.

3Fold in sweet potatoes, persimmons, coconut and raisins.

4Add vanilla. Bake in two 9 x 13-inch greased and floured pans at 350° for 50 to 60 minutes.

5Serve with whipped cream, if desired.
