  • 2 c. persimmon pulp
  • 1 1/2 c. brown or granulated sugar
  • 1 whole egg
  • 2 egg whites
  • 4 Tbsp. oil
  • 2 c. flour
  • 2 c. milk
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. vanilla

Directions

    Cream pulp, eggs, sugar and oil.

    Sift in dry ingredients and add milk and vanilla.

    Bake in a 13 x 9-inch pan at 350° for 35 minutes.
