  • beets, drained
  • 1 c. sugar
  • 1 c. vinegar
  • 1 tsp. pickling spices

Directions

    Drain liquid off beets into saucepan; put beets into jar.

    To the liquid, add the sugar, vinegar and pickling spices.

    Boil for about 3 minutes; pour over beets.

    Seal.

    The longer they pickle, the better.
