Ingredients

  • 7 pounds herrings fillets, fresh, skins left on, cut into 1 inch pieces
  • 2 1/2 quarts vinegar
  • 6 each cinnamon sticks
  • 1/4 cup allspice whole
  • 1/4 cup mace leaves
  • 1/4 cup black peppercorns
  • 1/4 cup cloves whole
  • 3 large onions sliced thinly
  • 1 3/4 cups sugar

Directions

    Combine all ingredients except herring and boil for 15 minutes.

    Add herring, let simmer for 15 minutes.

    Let cool in liquid; refrigerate.
