- 2 Rainbow trout, 9 ounces each, gutted
- 1 cup pin oatmeal, (Scottish oats)
- 1/2 lemon, sliced
- 6 tablespoons butter
- Sprig parsley
- Freshly ground salt
- Freshly ground white pepper
Directions

1Put the pin oatmeal on a plate and dip the trout into it, covering thoroughly.

2Melt 2 tablespoons butter in a frying pan.

3Dip the trout into the butter and then into the pin oatmeal once again.

4Add the remaining butter into the frying pan and melt.

5Add the trout a fry quickly on both sides.

6Cover the base of a casserole with a little of the hot melted butter and lay the trout in it.

7Pour the remaining butter over and season with salt and pepper.

8Plate in the preheated 450 degree oven for 10 minutes.

9Remove the trout from the oven and serve garnished with a sprig of parsley and lemon slices.
