- 2 1/2 c. plus 2 Tbsp. flour
- 1 1/4 c. cooking oil
- 3 eggs, slightly beaten
- 2 c. sugar
- 1 tsp. salt
- 2 tsp. soda
- 2 tsp. vanilla
- 2 tsp. cinnamon
- 1/2 c. coconut
- 1 c. chopped nut meats
- 1/2 c. crushed pineapple, drained
- 1 (16 oz.) can shoestring cut beets, undrained
Directions

1Blend ingredients in order given in large mixing bowl.

2Bake in 9 x 13-inch pan at 350° for 35 to 45 minutes.

3Ice with Cream Cheese Frosting or dust with powdered sugar.
