Pineapple Beet Cake

  • 2 1/2 c. plus 2 Tbsp. flour
  • 1 1/4 c. cooking oil
  • 3 eggs, slightly beaten
  • 2 c. sugar
  • 1 tsp. salt
  • 2 tsp. soda
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 1/2 c. coconut
  • 1 c. chopped nut meats
  • 1/2 c. crushed pineapple, drained
  • 1 (16 oz.) can shoestring cut beets, undrained

Directions

    Blend ingredients in order given in large mixing bowl.

    Bake in 9 x 13-inch pan at 350° for 35 to 45 minutes.

    Ice with Cream Cheese Frosting or dust with powdered sugar.
