  • 3 1/3 lbs chicken, cut into pieces
  • 2 tbsp sunflower oil
  • 3/4 cup vegetable stock
  • 1/4 lb raisins
  • 1/4 lb almonds, chopped
  • 1 None small pineapple, peeled and diced
  • 1 None red onion, diced
  • None None cooked rice, to serve

    Season the chicken. Heat the oil in a Dutch oven over a medium heat, add the chicken and brown for 12-15 mins, turning. Pour in the stock, add the raisins and almonds, cover and simmer for 30-35 more mins. Mix in the pineapple and red onion, then re-cover and continue to cook for 35-40 mins. Season to taste and serve with rice.
