Pineapple Bread

Ingredients

  • 1/2 c. margarine, softened
  • 1/2 c. sugar
  • 2 eggs
  • 2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 (8 oz.) crushed pineapple (undrained)
  • 1 tsp. vanilla

Directions

    Cream margarine; gradually add sugar, beating well.

    Add eggs, one at a time, beating well after each.

    Combine flour, baking powder and salt; add to creamed mixture alternately with pineapple.

    Mix well.

    Stir in vanilla.

    Spoon batter into a greased and floured loaf pan.

    Bake at 350° for 55 minutes to an hour or until wooden pick inserted in middle comes out clean. Cool loaf in pan for 10 minutes; remove from pan and cool completely on wire rack.

    Makes 1 loaf.

    Serve with cream cheese as an extra.
