- 1/2 c. margarine, softened
- 1/2 c. sugar
- 2 eggs
- 2 c. all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 (8 oz.) crushed pineapple (undrained)
- 1 tsp. vanilla
Directions

1Cream margarine; gradually add sugar, beating well.

2Add eggs, one at a time, beating well after each.

3Combine flour, baking powder and salt; add to creamed mixture alternately with pineapple.

4Mix well.

5Stir in vanilla.

6Spoon batter into a greased and floured loaf pan.

7Bake at 350° for 55 minutes to an hour or until wooden pick inserted in middle comes out clean. Cool loaf in pan for 10 minutes; remove from pan and cool completely on wire rack.

8Makes 1 loaf.

9Serve with cream cheese as an extra.
