Pineapple Cake

- 250 g butter or margarine
- 200 g sugar
- 3 eggs
- 300 g flour
- 3 tsp. baking powder
- 10 oz. can pineapple (crushed or chunk)
- 1/2 dl pineapple juice
- 25 g chopped almonds
Directions

1Cream the margarine and sugar until it is light and airy. Beat in eggs, one at a time, and put in pineapple (prefer to use crushed) and almonds. Sift together flour and baking powder. Add to batter alternately with juice.

2Pour the batter into a greased, wax paper lined spring-form pan.

3Bake at 350° for 1 hour.

4Let cake cool in pan before removing. Sprinkle with powdered sugar or glaze it before serving.
