- 3/4 c. fine graham wafer crumbs
- 1 Tbsp. sugar
- 1 egg yolk
- 1/4 tsp. vanilla
- 1 c. crushed pineapple, well drained
- 1/2 c. sour cream
- 1/4 tsp. vanilla
- 3 Tbsp. soft butter
- 8 oz. cream cheese, room temperature
- 5 tsp. sugar
- 1/8 tsp. nutmeg
- 1 egg white
- 1 tsp. sugar
Directions

1Heat oven to 375°.

2Butter 6 (5 ounce) custard cups.

3Measure and set aside 1 tablespoon of the graham wafer crumbs.

4Combine remaining crumbs with butter and 1 tablespoon sugar.

5Press about 2 tablespoons of this mixture firmly against bottom and sides of each custard cup with a spoon.

6Beat cream cheese until fluffy. Beat in egg yolk, 5 tablespoons sugar, 1/4 teaspoon vanilla and nutmeg.

7Stir in pineapple.

8Beat egg white until stiff and fold into pineapple mixture.

9Spoon equal amounts of mixtures.

10Set cups on a shallow pan and bake 20 minutes.
