Pineapple Chicken

Ingredients

  • 3 lb. cooked, cubed chicken
  • 1/4 c. chopped onion
  • 1/2 c. green and red peppers, chopped
  • 2 Tbsp. margarine
  • 1 c. orange juice
  • 3 Tbsp. cornstarch
  • 1 Tbsp. brown sugar
  • 1/4 tsp. cinnamon
  • taste of soy sauce
  • 1 c. chicken broth
  • 1 (8 oz.) can pineapple (crushed or chunk)
  • 1 pkg. green pea pods or peas

Directions

    Mix together orange juice and cornstarch.

    Add this and the sugar, cinnamon, chicken broth and soy sauce to the onion and peppers in the frypan.

    Add the can of pineapple with juice to the pan and cook until it thickens.

    Stir in the pea pods and chicken. Serve on patty shells or rice.
