Pineapple-Coconut Cookies

  • 1 c. solid vegetable shortening
  • 1 stick butter, softened
  • 1 1/2 c. sugar
  • 1 egg
  • 1 (8 oz.) can crushed pineapple (undrained)
  • 3 1/2 c. flour
  • 1 tsp. baking soda
  • 1 small can flaked coconut

Directions

    Cream together shortening, butter and sugar; beat in egg. Stir in pineapple. Cover and chill for 2 hours. Drop rounded teaspoonfuls on a lightly greased baking sheet. Bake at 400° for 8 to 10 minutes or until golden brown. Makes about 5 dozen.
