Pineapple-Coconut Cookies

- 1 c. solid vegetable shortening
- 1 stick butter, softened
- 1 1/2 c. sugar
- 1 egg
- 1 (8 oz.) can crushed pineapple (undrained)
- 3 1/2 c. flour
- 1 tsp. baking soda
- 1 small can flaked coconut
Directions

1Cream together shortening, butter and sugar; beat in egg. Stir in pineapple. Cover and chill for 2 hours. Drop rounded teaspoonfuls on a lightly greased baking sheet. Bake at 400° for 8 to 10 minutes or until golden brown. Makes about 5 dozen.
