Pineapple Cookies

  • 1 c. brown sugar
  • 1 c. white sugar
  • 1 c. shortening
  • 2 eggs, beaten
  • 1 tsp. vanilla
  • 3 c. flour
  • 1/4 tsp. salt
  • 1 Tbsp. baking soda
  • 1 (20 oz.) can crushed pineapple, drained

Directions

    Blend sugars and shortening and beat in the eggs and vanilla. Sift together flour, salt and baking soda.

    Add flour mixture and pineapple to creamed mixture and blend well.

    Drop by tablespoon on buttered cookie sheet and bake in 350° oven for about 15 minutes. Do not allow cookies to brown.

    They should be moist.

    Makes 4 to 5 dozen.
