Pineapple Date Loaf

Ingredients

  • 1/4 c. butter
  • 1 egg
  • 1 (8 1/2 oz.) can crushed pineapple
  • 2 1/2 c. flour
  • 1/4 tsp. baking soda
  • 1/2 c. chopped dates
  • 1/4 c. diced maraschino cherries (drain well)
  • 1/2 c. sugar
  • 1/4 tsp. lemon extract
  • 1/4 c. nuts
  • 2 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. water

Directions

    Cream butter and sugar.

    Add egg and extract.

    Drain pineapple, reserving juice.

    Add pineapple and nuts.

    Add dry ingredients. Add dates.

    Stir in dry ingredients alternately with reserved juice and 1/4 cup water.

    Fold in cherries.

    Pour in greased pan.

    Bake at 375° for 55 minutes.
