  • 1 1/2 lbs boneless skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 2 tablespoons olive oil
  • 1 red bell pepper, cut into strips
  • 1 pineapple, peeled, cored and cut into chinks
  • 1 serrano pepper, thinly sliced
  • 1/4 cup sweetened coconut milk
  • 1 tablespoon brown sugar

    sprinkle chicken with salt and curry powder.

    add chicken and quickly brown chicken on all sides.

    reduce heat to medium high.

    cook about 12 minutes or until no longer pink.

    transferchicken to a plate and cover to keep warm.

    for sauce, in skilletadd sweet pepper, cook for 3 minues.
