Pineapple Icebox Cake

Ingredients

  • 1 pint milk
  • 1 c. sugar
  • 2 egg yolks, slightly beaten
  • 2 egg whites, slightly beaten
  • 4 oz. pkg lemon jello
  • 1 medium can crushed pineapple, not drained
  • 1 pint heavy cream, whipped or 1 small Cool Whip, or 2 pkgs. Dream Whip
  • 1 angel food cake, sliced
  • Coconut

Directions

    Cook together milk, sugar, and egg yolks until it boils.

    Add lemon jello; let stand until it starts to set.

    Add pineapple, egg whites and heavy cream, prepared Dream Whip or Cool Whip.

    Line bottom of long pan with angel food cake slices.

    Pour 1/2 of mixture over cake then add another layer of cake slices.

    Pour the rest of the mixture over cake.

    Sprinkle with coconut.

    Let stand in refrigerator overnight.
