Pineapple Isle Dessert

  • 1 lb. vanilla wafers, crushed fine
  • 2 eggs
  • 1 stick butter
  • 1 1/2 c. confectioners sugar
  • 1 tsp. vanilla
  • 1 1/2 c. pineapple, drained
  • 1 c. Cool Whip
  • 1 c. chopped pecans

Directions

    Take 1/2 of vanilla wafers and press into the bottom of well-buttered casserole dish, then blend well the eggs, butter, sugar and vanilla.

    Pour on top of crumbs as second layer, then for third layer, put on crushed pineapple.

    As fourth layer, spread on whip cream; fifth layer, sprinkle on the nuts, then sprinkle on remainder of vanilla wafers.

    Chill in refrigerator 3 or 4 hours.

    Makes 6 to 8 servings.
