- 2 half-ripe pineapples
- 200 grams sugar
Directions

1Skin the pineapples and grate to the cores.

2Drain the grated pineapple with a sieve.

3Cook the grated pineapple with sugar over medium heat until dry.

4This will take about an hour.

5When the pineapple jam reaches your desired colour and thickness (dark almost orange yellow, thick paste), remove from heat and leave to cool.

6Store in airtight container.

7The pineapple jam can be used for pineapple tart fillings.
