- 2 to 3 Tbsp. butter or margarine
- 1 lb. chicken, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 to 3 slices cooked ham, diced (optional)
- 2 c. regular rice
- 1 can chicken broth
Directions

1Melt butter in a large skillet.

2Brown chicken on all sides. Then add onion and bell pepper.

3Cook for a few minutes (4 to 5) until onion and bell pepper are soft.

4Next add the ham, rice and chicken broth.

5Add enough water to cover the rice.

6Cover and cook over low-medium heat for about 45 minutes.

7Stir the mixture often.

8More water may need to be added to keep the rice from sticking.
