Pineapple Lime Mold

  • 1 pkg. lime gelatin
  • 1 c. boiling water
  • 1 c. pineapple juice
  • 2 (3 oz. size) pkg. cream cheese
  • 1 c. crushed pineapple, drained
  • 1/2 c. chopped celery
  • 1/2 c. chopped nuts

Directions

    In a bowl, dissolve the lime gelatin in boiling water.

    Add the pineapple juice drained from the pineapple.

    Chill until syrupy (30 minutes).

    In a second bowl, cream the cheese.
  5. 5
    Gradually work in the chilled gelatin syrup, blending until smooth.

    After each addition, add the crushed pineapple, chopped celery and nuts.

    Pour into a 4-cup mold or individual molds.

    Chill 2 hours.
