  • 12 cup granulated sugar
  • 34 cup margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 12 cup crushed pineapple, with juice
  • 12 cup carrot, grated
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt

Directions

    Cream sugar and margarine until fluffy.

    Add eggs one at a time, beating in completely.

    Add vanilla, pineapple and carrot, mixing until smooth.

    Add the rest of the dry ingredients and continue to mix.

    Spoon into greased muffin tins and bake at 350F for 20 minute or until toothpick comes out clean.
