  • 2 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 egg, beaten
  • 1 (8 oz.) can crushed pineapple, undrained
  • 1/2 c. butter, melted
  • 1/4 c. plus 1 Tbsp. milk
  • 1 tsp. vanilla

Directions

    Combine first 4 ingredients in a large bowl; make a well in center of mixture.

    Combine egg and remaining ingredients; add to dry ingredients, stirring just until moistened.

    Spoon batter into paper-lined muffin pans, filling two-thirds full.

    Bake at 400° for 20 to 22 minutes.

    Remove from pan immediately.
