- 2 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. sugar
- 1 egg, beaten
- 1 (8 oz.) can crushed pineapple, undrained
- 1/2 c. butter, melted
- 1/4 c. plus 1 Tbsp. milk
- 1 tsp. vanilla
Directions

1Combine first 4 ingredients in a large bowl; make a well in center of mixture.

2Combine egg and remaining ingredients; add to dry ingredients, stirring just until moistened.

3Spoon batter into paper-lined muffin pans, filling two-thirds full.

4Bake at 400° for 20 to 22 minutes.

5Remove from pan immediately.
