Pineapple Nut Bread

  • 2 c. flour
  • 1/2 c. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. chopped nuts
  • 1 egg
  • 1 tsp. vanilla
  • 2 Tbsp. butter, melted
  • 1 (4 oz.) can crushed pineapple (do not drain)
  • 1 tsp. baking soda

Directions

    Beat egg, vanilla and melted butter in bowl.

    Add flour, sugar, salt and baking powder.

    Mix well.

    Ingredients will be slightly dry and crumbly.

    Add nuts.

    Dissolve baking soda in pineapple (do not drain) and add to mixture.

    Pour into greased and floured loaf pan.

    Bake at 350° for 45 minutes to 1 hour.
