- 3 c. sifted flour
- 4 tsp. baking powder
- 1/2 tsp. soda
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 2 Tbsp. butter
- 3/4 c. sugar
- 1 egg
- 3/4 c. evaporated milk
- 1 Tbsp. lemon juice
- 1 small can crushed pineapple
- 1/2 c. chopped nuts
Directions

1Sift the flour with the baking powder, soda, salt and cinnamon.

2Cream the butter and sugar thoroughly in a large mixing bowl.

3Beat in egg.

4Stir in milk, lemon juice, pineapple with its syrup and nuts.

5Add flour mixture all at once and stir just until dry ingredients are dampened.

6Turn into a well-greased loaf pan. Bake in preheated 375° oven until done when tested (about 55 minutes).

7Let cool in pan 5 minutes, then turn out on cooling rack.

8Makes 1 loaf.
