Pineapple Salad

Ingredients

  • 2 c. pineapple juice
  • 2 eggs
  • 3 Tbsp. sugar
  • 2 Tbsp. cornstarch
  • 1 tsp. vanilla
  • 3/4 c. whipping cream
  • 1 can (1 2/3 c.) pineapple tidbits, drained
  • 1/2 c. nuts
  • 2 c. miniature marshmallows
  • 3 or 4 bananas, diced

Directions

    Cook together juice, eggs, sugar and cornstarch until thick. Cool slightly and add vanilla.

    When cold, fold into whipped cream and pour over mixed pineapple, nuts, marshmallows and bananas.
