  • 2-1/2 cup Graham wafer crumbs
  • 1/4 cup melted butter
  • 2-1/4 cup icing sugar
  • 1/4 cup melted butter
  • 2 eggs, well beaten
  • 1 can (250) crushed pineapple, drained
  • 1 cup whipping cream, beaten

    Crust: Combine crumbs and butter.

    Reserve 1/4 cup for topping.

    Press remaining crumbs into a 2 liter greased cake dish.

    Filling: Cream butter and icing sugar.

    Blend in eggs; beat until smooth.

    Spread over crust.

    Top with layer of crushed pineapple then whipping cream.

    Sprinkle remaining crumbs on top.

    Freeze 24 hours.
