  • 12 Tbsp. butter
  • 1 c. dark brown sugar
  • 1/4 c. pineapple juice
  • 5 whole pineapple rings
  • 5 maraschino cherries
  • 1/2 c. milk
  • 1 egg
  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. granulated sugar
  • whipped cream (optional)

Directions

    Preheat oven to 400°.

    Melt 4 tablespoons of butter in an ovenproof skillet or 9-inch cake pan.

    Stir in brown sugar over low heat until it dissolves.

    Remove from heat; add pineapple juice. Arrange pineapple rings with a cherry in the center in 1 layer; set aside.

    Melt remaining 8 tablespoons butter; remove from heat. Stir in milk and egg; beat well.
