- 1 egg
- 1 c. sugar
- 1/2 c. butter
- 2 c. flour
- 2 tsp. baking powder
- 3/4 c. pineapple juice
- 3/4 c. brown sugar
- 3 Tbsp. butter
- 1 can pineapple, sliced or chunk
Directions

1Mix egg, sugar, butter, flour, baking powder and pineapple juice.

2Smear butter in a 12-inch cast-iron skillet.

3Sprinkle and lightly pat brown sugar in the skillet.

4Place pineapple slices or chunks in skillet.

5Pour batter in skillet.

6Bake at 375° for 30 to 40 minutes.

7Place a plate or serving platter upside down on top of the skillet.

8Flip over.
