Pink Syllabub

Ingredients

  • 5 tablespoons white wine
  • 3 tablespoons black currant liqueur
  • 12 lemon, rind of (grated)
  • 1 tablespoon superfine sugar
  • 1 cup heavy cream
  • 4 ladyfingers

Directions

    Mix wine, liqueur, lemon rind and sugar in a bowl and set aside for at least 30 minutes.

    Add cream and whip until the mixture has thickened enough to stand in soft peaks.

    Break up lady fingers and divide between 2 glasses.

    Place cream mixture in a pastry bag with a large star or plain tip and pipe it over the lady-fingers.

    Alternatively, simply pour the syllabub over the lady-fingers.

    Chill until ready to serve.

    Before serving, decorate each syllabub with red currants if available, or soft fresh fruit, or mint sprigs.
