Ingredients

  • 6 small yellow squash, cubed
  • 1 small or medium green pepper, chopped
  • 1 small onion, chopped
  • 2 or 3 cloves garlic, minced
  • 1 ear yellow corn, cut from cob and scraped
  • 1 small to medium tomato, cubed
  • 1/8 tsp. sugar
  • salt and pepper to taste
  • 2 tsp. oil

Directions

    Place skillet on medium heat and add oil.

    Lightly cook/brown the onion and add squash, green pepper and garlic.

    Stir quickly and reduce heat to medium.

    Add the corn, tomato, sugar, salt and pepper.

    Stir well and within 5 minutes, turn stove off.

    Let the mixture stand for 5 minutes more and then serve.
