- 6 small yellow squash, cubed
- 1 small or medium green pepper, chopped
- 1 small onion, chopped
- 2 or 3 cloves garlic, minced
- 1 ear yellow corn, cut from cob and scraped
- 1 small to medium tomato, cubed
- 1/8 tsp. sugar
- salt and pepper to taste
- 2 tsp. oil
Directions

1Place skillet on medium heat and add oil.

2Lightly cook/brown the onion and add squash, green pepper and garlic.

3Stir quickly and reduce heat to medium.

4Add the corn, tomato, sugar, salt and pepper.

5Stir well and within 5 minutes, turn stove off.

6Let the mixture stand for 5 minutes more and then serve.
