  • 56 Ritz crackers
  • 1 stick or 1/2 c. margarine
  • 2 (3 1/2 oz.) boxes pistachio pudding
  • 2 c. milk
  • 2 pt. softened vanilla ice cream
  • 13 oz. container Cool Whip
  • 1 c. pistachios
  • 1 c. maraschino cherries

    Use a 9 x 13-inch pan.

    Crush Ritz crackers into crumbs.

    Melt butter.

    Put on cracker crumbs spread in pan.

    Bake at 325° for 10 minutes, then cool.

    Mix pudding, milk and softened ice cream together.

    Pour onto crust.

    Cover with Cool Whip.

    Sprinkle with pistachios and cherries on top.
