- 1 Tbsp. diet margarine
- 1 small onion, chopped
- 1/2 small green pepper, chopped
- 8 beaten eggs
- 1/2 c. skim milk
- 1 (2 1/2 oz.) jar sliced mushrooms, drained
- 1/2 tsp. salt
- 1/2 tsp. Italian seasoning (optional)
- 1/4 tsp. pepper
- 1/2 c. pizza sauce
- 1/4 c. shredded Mozzarella cheese
- 2 ripe olives, sliced (optional)
Directions

1In an 8 x 1 1/2-inch round baking dish, microcook margarine, uncovered, on 100% power (High) for 30 to 45 seconds or until melted.

2Add onion and green pepper.

3Microcook, uncovered, on 100% power (High) for 2 to 3 minutes or until vegetables are tender.

4Combine eggs, milk, mushrooms, salt, Italian seasoning (if desired) and pepper.

5Pour into baking dish.

6Microcook, uncovered, on 100% power (High) for 5 to 6 minutes or until eggs are almost set, pushing cooked portions to center of dish several times during cooking.
