- 6 large eggs
- 1 c. plus 6 Tbsp. sugar
- 1/2 c. oil
- 6 Tbsp. Crisco, melted
- 1 tsp. anise extract or 6 drops anise oil
- 3 1/2 c. flour
Directions

1In a large bowl, beat eggs (room temperature) for at least 5 minutes, then add sugar.

2Beat until thick and lemon-colored.

3In a small bowl, mix oil, anise and Crisco.

4Then add it to the egg mixture.

5Using a fork, slowly add flour.

6Do not beat.

7Heat iron.

8When iron is hot, put a little oil on a teaspoon (to prevent sticking) and dip into mixture.

9Drop walnut size batter into center of hot iron.

10Be careful iron does not get too hot. Cook for about 45 seconds to 1 minute on each side or until light golden brown.

11After cooled, store in coffee cans.

12Freezes well. Makes 4 1/2 dozen.
