  • 1 bunch plantains ripe
  • 1/2 cup tomato finely chopped
  • 1/4 cup finely chopped onion
  • 1/4 cup green pepper finely chopped Sweet/
  • 1 cup english cheddar cheese grated
  • butter French
  • 1 dash white pepper
  • seasoning salt to taste

Directions

    Cook plantains in salted boiling water until tender.

    Sautee tomato, onion, green pepper with butter and seasoning salt.

    Mash plantains with sauteed ingredients and cheddar cheese.

    Serve hot with beef, chicken or lamb stew.
