- 2 c. plums (like Italian prune plums)
- 1 c. sugar
- 1 T. lemon juice
- (10 plums is roughly 1c. or 2010 g. equals 8 c. pureed plum. Add 4 c. sugar to 2010 g. pureed plum.)
Directions

1Pit the plums but leave skins on. Process plums to desired texture. Add lemon juice and cook on moderate heat for 5 minutes. Add sugar, stir, lower heat and cook to desired thickness. This can take a couple of hours depending on the juiciness of the plums and the consistency you like. The jam can then be frozen or canned if it is not to be used right away.
