- 2 tablespoons sugar
- 1 lb green-skinned plum, halved and pitted
- 1 14 cups whipped cream
- 1 egg white
Directions

1Place the sugar and 2/3 cup water in a heavy-bottomed saucepan.

2Bring to a boil, stirring to dissolve the sugar.

3Boil for 2 minutes.

4Add the plums and simmer for 3-8 minutes, until tender but still holding their shape.

5Divide the plums and syrup in half and leave to cool.

6Puree half.

7Drain the remaining plums and place at the bottom of a serving dish.

8Fold the whipped cream into the puree.

9Beat the egg white and fold into the cream.

10Pour over chopped pistachio nuts and serve.
