- 3 c. water
- 1/2 c. white wine
- 1 tsp. salt
- 1 bay leaf
- 6 peppercorns
- dash of thyme, crushed
- 1 sprig parsley
- 1 1/2 lb. halibut steaks
Directions

1Combine water, wine, salt, bay leaf, peppercorns, thyme and parsley; bring to boil.

2Add halibut.

3Reduce heat; cover and simmer 10 minutes per inch of thickness measured at its thickest part or until halibut flakes easily when tested with fork.

4Gently remove halibut and drain.

5Serve hot or chilled.

6Garnish with cucumber slices.

7Serve with Creamy Cucumber Dill Sauce.

8Makes 4 to 6 servings.
