- poke greens to fill 4-quart pan
- 1 tsp. soda
- oil or shortening
- 2 cans spinach
- 12 to 18 eggs
- salt
Directions

1Wash poke greens thoroughly.

2Place in pan, add water and bring to a boil.

3Add soda.

4Then drain off soda water.

5Add fresh hot water.

6Bring back to boiling, lower flame and cook slowly for 20 minutes.

7Drain and place in skillet with drained spinach and oil. Continue to cook and dip out excess water for a few minutes.

8Stir eggs and add to greens and cook until eggs are cooked.
