Ingredients
- 3 to 4 lb. chuck roast, chopped into chunks
- 1 large onion, sliced and separated into rings
- 1 c. pineapple juice
- 3 Tbsp. soy sauce
- 1/2 tsp. salt
- 1 1/2 tsp. ginger
- 4 stalks celery, sliced paper thin lengthwise
- 4 carrots, sliced paper thin lengthwise
- 1 medium can mushrooms
- 1 tsp. cornstarch
- 2 Tbsp. water
Directions

1Cover beef with onion rings in shallow pan, pour mixture of pineapple juice, soy sauce, salt and ginger over top.

2Let stand 1 hour to season, turning once.

3Place beef and onion in a deep electric stove or Dutch oven; simmer for 1 to 2 hours or until beef is tender when pierced with fork.

4Reduce heat, add celery and carrots; simmer for 10 minutes.

5Place mushrooms on top for 5 minutes, remove to heated serving platter.

6Stir cornstarch to paste in water, stir into juices in pan, cook, stirring until gravy thickens and boil 3 minutes.

7Season with additional soy sauce, if desired.

8Serves 4 to 6.
