- 1 (8 ounce) can water chestnuts, drained and finely chopped
- 3 tablespoons soy sauce
- 1 tablespoon brown sugar, packed
- 2 garlic cloves, minced
- 1 teaspoon parsley flakes
- 1/2 teaspoon onion powder
- 2 lbs lean ground beef
- Apricot Sauce
- 1 cup apricot jam
- 3 tablespoons cider vinegar
- 1/4 teaspoon paprika
Directions

1Combine first 6 ingredients in a large bowl.

2Add ground beef. Mix well.

3Rol into 1 inch balls, arrange in single layer on ungreased baking sheet.

4Bake in 375 degree oven for about 15 minutes or until meatballs are no longer pink inside.

5Apricot sauce: Combine jam, vinegar and paprika in small bowl. Makes about 1 cup. Serve with meatballs.
