  • 1 whole loin of pork, boneless (6 to 8 lb.), trim off fat
  • salt
  • pepper
  • rosemary
  • 1/2 c. soy sauce
  • 1/2 c. catsup
  • 1/4 c. honey
  • 2 large cloves garlic, crushed

Directions

    Put meat on rack in shallow roasting pan and sprinkle with salt, pepper and rosemary.

    Roast pork in moderate oven at 350° for about 2 to 2 1/2 hours or until tender when tested with a fork.

    Baste frequently with mixture of soy sauce, catsup, honey and garlic.

    Transfer pork to heated platter; garnish with watercress.

    This serves a crowd and is so easy to fix!
