  • 4 cups shredded red cabbage
  • 1 onion, chopped
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 tsp juniper berries
  • 1 apple cubed
  • 3 pound boneless pork shoulder roast

Directions

    Combine cabbage, onion, brown sugar, juniper berries, apple and vinegar. Sprinkle roast with salt and pepper and brown in heavy skilllet,

    about 5 to 6 minutes total, turning until browned on all sides.

    Place pork in slow cooker; cover, and cook on low for 7 to 8 hours.
