- 2 (3/4 lb.) pork tenderloins, cut into 1/2-inch thick slices
- 2 to 4 Tbsp. olive oil
- 2 medium green peppers, cut into 1-inch pieces
- 2 medium onions, cut into 1-inch pieces
- 1 (8 oz.) can tomato sauce
- 1 c. water
- 1/2 tsp. oregano
- 1/4 tsp. salt and pepper
- 1 (4 oz.) can sliced mushrooms
Directions

1Brown pork in oil in skillet over medium heat.

2Remove pork and set aside.

3Add peppers and onions to drippings.

4Cook until lightly browned.

5Return pork to skillet.

6Add tomato sauce and next 4 ingredients.

7Bring mixture to a boil.

8Reduce heat and simmer 15 minutes.
