Pork Fried Rice

Ingredients
- 1 (5 oz.) boneless pork chop, diced
- 1/2 c. diced carrots
- 1/2 c. frozen tiny English peas, thawed
- 1/4 c. chopped onion
- 2 Tbsp. butter or margarine
- 3 c. cooked long grain rice
- 2 eggs, beaten
- 3 to 4 Tbsp. soy sauce
- 1/4 tsp. garlic powder
- 1/8 tsp. ground ginger
Directions

1Saute first 5 ingredients in butter in a large skillet 3 to 4 minutes or until pork is cooked.

2Remove from skillet and set aside.

3Heat rice in skillet until thoroughly heated.

4Push rice to sides of skillet forming a well or nest in the center.

5Pour egg into well and cook until set, stirring once.

6Stir rice into eggs. Add the vegetables and remaining ingredients.

7Stir well.

8Yields 4 to 6 servings.
