Pork Fried Rice

- 1 1/2 c. hot water
- 1 1/2 c. original minute rice
- 3/4 lb. diced cooked pork or (about 1 1/2 cups)
- 1 medium onion, chopped
- 1/4 c. chopped green pepper
- 1/4 c. oil
- 1 egg, beaten
- 1/4 c. soy sauce
- 2 scallions, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
Directions

1Stir hot water and rice in bowl.

2Cover with foil and let stand 5 minutes or until water is absorbed.

3Fluff with fork. Meanwhile, cook and stir pork, onion and green pepper in hot oil in large skillet for 2-3 minutes.

4Add rice.

5Cook and stir for 2-3 minutes, stirring constantly.

6Move rice to one side and pour the egg into bottom of skillet.

7Cook until egg is set then stir into rice.

8Stir in scallions, soy sauce, salt and pepper.

9Cover and cook over low heat for 2-3 minutes to heat thoroughly.

10Beef may be a substitute for pork.
