- 1 cup sliced fresh mushrooms
- 13 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon reduced-fat butter
- 1 (14 1/2 ounce) can diced tomatoes, undrained
- 1 cup cubed cooked pork (about 2 pork chops)
- 12 cup chopped green pepper
- 12 cup chopped sweet red pepper
- 1 teaspoon italian seasoning
- 12 teaspoon salt, optinal
- 1 pinch sugar
- 12 cup uncooked instant rice
Directions

1In a saucepan, saute the mushrooms, onion and garlic in butter until tender.

2Stir in tomatoes, pork, peppers, Italian seasoning, salt if desired, and sugar; bring to a boil.

3Stir in rice.

4Cover and remove from the heat; let stand for 5 minutes.

5Stir before serving.
