  • 4 oz pork fat back
  • 2/3 C white wine
  • 2 garlic cloves
  • 1 bay leaf
  • thyme
  • mace
  • salt + pepper
  • flour
  • 2 eggs, beaten
  • bread crumbs
  • vegetable oil, for frying

    mix pork belly to pepper in heavy casserole dish, cover and cook 3-4 hours, let cool.

    take meat out and shred, return meat to pan, season in loaf pan and put in fridge overnight.

    remove meat from pan, cut into cubes, dip in flour, egg and crumbs

    fry in oil until golden
