- 2/3 C white wine
- 2 garlic cloves
- 1 bay leaf
- thyme
- mace
- salt + pepper
- flour
- 2 eggs, beaten
- bread crumbs
- vegetable oil, for frying

2mix pork belly to pepper in heavy casserole dish, cover and cook 3-4 hours, let cool.

3take meat out and shred, return meat to pan, season in loaf pan and put in fridge overnight.

4remove meat from pan, cut into cubes, dip in flour, egg and crumbs
