Pork Satay

  • 3/4 cup smooth peanut butter
  • 1/3 cup coconut cream
  • 1/4 cup sweet chili sauce
  • 1/3 cup chicken stock
  • 1 tbsp lime juice
  • 1 lb pork loin, cut into thin strips
  • 1 lb white long-grain rice
  • 1/3 cup roasted unsalted peanuts, coarsely chopped
  • 4 tbsp fresh cilantro leaves, coarsely chopped

Directions

    Preheat oven to 350°F. Combine peanut butter, coconut cream, chili sauce, chicken stock and lime juice in a small bowl.

    Thread pork onto 8 skewers. Arrange in a large shallow baking dish. Spoon peanut sauce over top. Bake, uncovered, for 20 mins, or until pork is cooked through.

    Meanwhile, place rice in a medium saucepan with 3 cups boiling water. Bring to a boil, stirring, then cover with a tightly fitting lid. Cook over low heat for 15 mins, without removing lid. Remove from heat and let stand, covered, for 5 mins.

    Divide rice between serving dishes. Top with pork satay and peanut sauce from baking dish. Sprinkle with peanuts and cilantro.
